Refreshing Summer Chicken Salad

You will need:
  • 1 organic chicken breast cooked & cut in cubes
  • 2 tbsp tamari sauce, organic
  • 1/3 cup Organic mayo or Hummus
  • 2 medium celery stalks, diced
  • 2 green onions, thinly sliced
  • 2 kosher pickles (Bubbies), diced
  • 1 tbsp sesame seeds (white, black or roasted)
Preparation:
  1. In a small bowl, mix hummus (or mayonnaise) with soy sauce and sea salt. In another bowl, mix
  2. chicken with chopped celery, onions and sesame seeds. Add dressing to chicken and mix.
  3. Chill and serve in a whole grain sandwich along with lots of delicious sauerkraut.
