Quinoa and Kale Salad

Bringing quinoa and kale together in this delicious and refreshing summer salad!

What you need:

  • 1 1/2 cup uncooked quinoa
  • 3 cups water
  • 2 cups of fresh kale, very thinly chopped
  • 2 carrots, grated
  • 1⁄4 cup sunflower seeds
  • 1⁄4 cup green onion chopped

Quinoa Preparation:

  1. Bring water to a boil. Add quinoa and reduce heat to medium, let cook for approximately 12-15 minutes
  2. Take stems out of kale leaves. Thinly chop. Steam for 3-5 minutes
  3. Add grated carrot, sunflower seeds, and green onion
  4. Mix dressing ingredients together, and add to quinoa and vegetables
  5. Can serve hot or cool.

Dressing:

  • 1/3 cup olive oil
  • 1 squeeze lemon
  • sea salt to taste
  • 1/2 tsp sage
  • 1/2 tsp thyme
