Can’t Beet this Spring Salad

Ingredients:

  • 2 large beets – roasted and cut into cubes
  • ½ cup of cilantro coarsely chopped
  • 2 green spring onions – finely sliced
  • 2/3 cup goat feta crumbled

Dressing:

  • 2 tbsp olive oil
  • 1.5 tbsp balsamic vinegar
  • 1 tsp maple syrup
    Mix all ingredients in bowl and toss with dressing

What’s good about this salad?

The beets are great to build and nourish the blood  according to TCM nutrition. This is great for women after their periods to rebuild blood. The cilantro is a great green food that helps to rid our body of heavy metals. We also say the green foods help to move the Qi and blood. It’s a warm food so helps with cold conditions.

The green onion (scallion) is also warm, and helps with cold damp as well as helping to move the blood (so it helps with circulation!). The goat feta is easier to digest than the cow products (the fat molecule is smaller and closer to the human form, so easier to absorb and digest), and we say that dairy products very moistening and are great a building the yin aspect in the body. This is the part that gets depleted in women more easily than men and often women who have a more severe transition to menopause are often lacking in the yin aspect. So for women who are feeling a bit dry and depleted, this would be great salad! And because the beets are slow roasted, it means the salad is easier to digest, but we’ve still got some fresh spring produce in the scallion and cilantro, keeping the nutrient level high, but because they are all warm in property – easy to absorb!
