BBQ Plantain & Goat Cheese

The summer is ending, but before it does I want to pass on one of my favorite BBQ recipe treats.

Everybody and their dog is watching their carb intake these days. This recipe is a great way to vary your carb intake away from grains. You might not realize that nutritionally bananas are really more of a carb that a fruit. In fact most places that banana’s are grown that is exactly how they use them, as the carb part of the meal.

I got this recipe from a Cuban friend of mine.

  1. Ripe plantain ( these are not banana’s but very similar, you can find them in lots of regular grocery stores now, but if you can’t go to a caribbean grocery store) It’s important that the plantain is ripe, some other ways to cook them call for green ones, but not this one
  2. Put it on the BBQ in the skin. lowish heat
  3. Flip over after 10 ish minutes, and then wait until the skin of the peel splits
  4. Slice open and put in goat’s cheese (soft). You can do this in the peel or take it out and mix it up in a bowl

Serve fresh and hot.
